- 2 cups cooked, chopped/shredded chicken
- 2-3 cups raw sliced zucchini
- 1 jar pasta sauce
- 1 box bowtie pasta
- Parmesan cheese
- 1 teaspoon dried oregano
Cook bowtie pasta according to package directions until al dente.
While pasta cooks, heat pasta sauce in a large skillet over medium heat for 5 minutes. Add the sliced zucchini.
Simmer the sauce and zucchini for about 5-7 minutes, or until the zucchini is crisp-tender. Stir in the cooked chicken and heat through for 2 minutes.
Drain the cooked pasta and add it to the skillet with the sauce mixture.
Toss everything together until the pasta is well coated.
Serve immediately, topped generously with grated parmesan cheese.
- Use pre-cooked rotisserie chicken for an even quicker meal.
- For extra flavor, sauté a minced garlic clove with the zucchini.
- Add a splash of cream to the sauce for a richer, more decadent finish.
- Don't overcook the zucchini; it should retain a slight crispness.
