- 1 small zucchini
- 2 carrots
- 1 yellow onion
- 2 cloves garlic
- 1 tbsp olive oil
- 1/2 lb ground beef
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
Grate the zucchini and carrots (about 1.5 cups each). Dice the onion and mince the garlic.
Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned.
Add onion and garlic, sauté until onions are soft, about 3 minutes.
Stir in zucchini, carrots, basil, oregano, salt, and pepper. Sauté for 5 minutes until vegetables are wilted.
Stir in pasta sauce, bring to a simmer, then reduce heat and simmer for 10 minutes.
Cook spaghetti according to package directions. Drain and return to pot.
Add 1 cup of sauce to spaghetti and toss to coat. Serve topped with extra sauce.
