- 4 cloves garlic
- 1 tbsp olive oil
- 1 can petite diced tomatoes
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp black pepper
- 4 oz cream cheese
- 19 oz frozen cheese tortellini
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
Mince the garlic and sauté it in olive oil over medium heat for about one minute.
Add diced tomatoes, basil, oregano, and black pepper to the skillet. Cook until hot.
Cut cream cheese into chunks and add to the skillet, stirring until melted.
Boil water for tortellini, add tortellini, and cook until they float, about three minutes.
Chop spinach and add to the skillet, stirring until wilted.
Add drained tortellini to the skillet and mix with the sauce.
Sprinkle Parmesan cheese on top and stir. Adjust seasoning to taste.
- Use good quality cream cheese for the smoothest sauce.
- Don't overcook the tortellini; they should be al dente.
- Adjust the spice level by adding a pinch of red pepper flakes with the tomatoes.
- For a richer sauce, stir in a splash of heavy cream with the cream cheese.
