Ingredients

  • 350 g penne pasta (or other short pasta)
  • 40 g butter
  • 3 garlic cloves, finely minced
  • 4 tbsp flour, plain/all purpose
  • 4 cups milk, any fat %, dairy or non-dairy
  • 2 tsp Vegeta or chicken/veg stock powder
  • 1/2 cup parmesan, finely shredded
  • 1/2 tsp mustard powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 425 g canned tuna, drained
  • 400 g canned corn, drained

Method

  1. Preheat oven to 180°C/350°F.
  2. Prepare the crunchy topping by mixing breadcrumbs, melted butter, and herbs.
  3. Cook pasta per packet directions, subtracting 1 minute from the recommended time. Drain and let cool slightly before returning to the pot.
  4. Melt butter in a large pot over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
  5. Add flour to the melted butter and stir to form a roux. Gradually whisk in about 1/3 of the milk until smooth, then add the remaining milk while whisking continuously.
  6. Stir in Vegeta, mustard powder, onion powder, and garlic powder until well combined.
  7. Heat the sauce over medium heat, whisking constantly for 4-5 minutes until it thickens enough to coat the back of a spoon.
  8. Remove the sauce from the stove and stir in the shredded parmesan cheese until melted and creamy.

Notes

- Use canned tuna in oil for a richer flavor.
- Substitute corn with peas or broccoli for variety.
- For a crispy topping, sprinkle breadcrumbs mixed with parmesan before baking.
