Ingredients
  

  • 1 pound uncooked pasta
  • 1/4 cup unsalted butter
  • 4 cloves garlic (grated or pressed)
  • fine sea salt and freshly-ground black pepper
  • 1/4 cup white miso
  • 2 ounces freshly-grated Parmesan

Instructions
 

  • Cook the pasta in salted water until just al dente, then drain.
  • Melt the butter in a pan over medium heat and sauté the garlic for 2 minutes.
  • Whisk miso with 1/4 cup reserved pasta water, then add to the garlic butter.
  • Toss the drained pasta with the sauce and cheese, adding more pasta water as needed.
