- 16 oz lasagna noodles
- 15 oz whole milk ricotta cheese
- 1 cup mozzarella cheese (shredded)
- ¼ cup Parmesan cheese (grated)
- 1 large egg
- ¼ tsp salt
- ¼ tsp black pepper (freshly cracked)
- 10 oz frozen spinach (thawed)
- 1 small yellow onion (diced)
Preheat oven to 400ºF (200ºC).
Boil lasagna noodles in salted water until al dente. Drain and set aside.
In a bowl, combine ricotta cheese, mozzarella, Parmesan, egg, salt, pepper, and well-drained spinach. Stir until combined.
Spread marinara sauce on the bottom of a baking dish.
Spread the ricotta mixture over each noodle and roll tightly.
Place rolled noodles seam-side down in the dish, top with marinara and remaining mozzarella.
Bake for 20-25 minutes until cheese is melted and bubbly.
