- 2 tablespoons olive oil or avocado oil
- ½ large white or yellow onion, diced
- 7 cloves garlic, peeled and minced
- 2 celery ribs, diced
- 2 medium carrots, peeled and diced
- 1 cup (4 oz) mushrooms, sliced
- 1 medium zucchini, diced
- 1 (28-ounce) can crushed tomatoes
- 4 cups vegetable broth
- 1 (14-ounce) can red kidney beans, drained and rinsed
Heat the olive oil in a large pot over medium heat.
Add the onion, garlic, celery, and carrots. Cook for 8-10 minutes until softened.
Stir in the mushrooms and zucchini, cooking for another 5 minutes until tender.
Pour in the crushed tomatoes and vegetable broth, stirring to combine.
Add the kidney beans and bring to a simmer. Cook for at least 20 minutes.
Season with salt and pepper to taste before serving.
- Use a good quality vegetable broth for the best flavor foundation.
- Don't skip the sautéing time for the aromatics (onion, garlic, celery, carrots) – this is crucial for developing depth.
- For a thicker soup, you can mash some of the kidney beans against the side of the pot before simmering, or add a small amount of gluten-free pasta in the last 10 minutes of cooking.
- This soup stores beautifully in the refrigerator for up to 4 days and can be frozen for up to 3 months.
