Marlow Bendrose runs PastaPeak from a small kitchen in Brooklyn. After eight years working in New York food media, testing and editing recipes and fact-checking nutrition claims, she started PastaPeak so that every recipe published carries her name only after its ratios and timings have been checked against established culinary references. She writes both the recipes and the longer lab guides on pasta technique, sauces, and the food science behind them.
